Spinach Timbales

From a Jelke’s Good Luck margarine package. We first met Jelke’s Good Luck margarine in the post for mince pie from this box.

Spinach Timbales

2 cups spinach (canned or fresh, drained)
1/2 teaspoon onion, grated
3 eggs, well beaten
1 cup milk
2 Tablespoons Good Luck Margarine, melted
Salt and pepper to taste

Chop spinach. Combine ingredients in the order listed. Put mixture into individual baking dishes which have been well-spread with Good Luck Margarine. Set dishes in a pan of hot water. Bake timbales in a moderate oven (350 deg. F.) until firm–approximately 40 to 60 minutes. Unmold and serve hot. Yield: 6 servings.
