Red Velvet Cake From Montana

With Softasilk cake flour.

From a box sold in Nampa, Idaho.

Red Velvet Cake — From Montana

1 cup butter
1-1/2 cups sugar
2 eggs
2 Tbsp. cocoa (1 Tablespoon cocoa)
2 oz. red food coloring
1 tsp. salt
1 tsp. vanilla
1 cup buttermilk
2-1/2 cups sifted Softasilk cake flour (only)
1-1/2 tsp. vinegar
1 tsp. soda
1/4 tsp. baking powder

Cream butter, sugar, and eggs.

Make a paste with cocoa and food coloring; add to creamed mixture.

Mix salt and vanilla with buttermilk; add alternately with flour to creamed mixture.

Do not beat–fold in.

Add soda to vinegar in a large glass; do not add until it quits foaming.

Bake in 2 (9-inch) pans, greased and floured, at 375 for 30 minutes.
