You could replace the Jell-o with chicken. I don’t think I’ve ever said that about a recipe before and I don’t think I’ll get the chance again soon.

2 small packages apricot Jell-o
1 large can apricots
Drain apricots and keep juice. Add enough juice to make 3 cups with water. Bring to a boil and dissolve Jell-o.
Puree apricots in blender; add to Jell-o after it has cooled. Pour in pan or molds. Serves 8.
Double this for a 11×13″ [pan]. Serves 15 very nice servings.
Top with mayo with curry powder added.
