Texas Barbecue Sauce

Why omit the butter for pork? And isn’t it a little strange to have pork instructions for Texas barbecue sauce? You have a lot of barbecue pork in Texas we don’t know about?

From a box sold in San Antonio, Texas.

Texas Barbecue Sauce

2 c. water
1/2 t. black pepper
4 T. brown sugar
1 t. garlic salt or 2 cloves garlic chopped fine
2 t. salt
1 c. cider vinegar
1 bottle Worcestershire
Juice of 4 lemons
4 T. butter (over)

Bring water to boil. Add pepper. Simmer 5 minutes. Add brown sugar and stir till dissolved. Add garlic, vinegar, and stir.

Add 1/2 bottle of Worcestershire; simmer for 1 min. Add lemon juice and stir. Then add rest of Worcestershire and stir while heating.

Add butter as meats during use. Better to make in large quantity. By omitting butter will keep for weeks in refrigerator when ready to heat slowly add butter. Omit butter for pork.

    Really enjoying your Web site. Thanks for posting such interesting recipes. This looks like a typical mopping sauce used during cooking over a fire. Many pork cuts have plenty of fat, so no butter is needed in the sauce to keep the meat moist.
