Oven Fried Potatoes

Dipped in melted butter. But read the note below the recipe before you start it.

From a box sold in Quincy, Massachusetts.

Oven Fried Potatoes

Wash and pare potatoes. Cut in eights lengthwise. Cover with cold water. Let stand 30 minutes.

Drain and dry on paper towel. Dip in melted butter.

Arrange on a shallow baking dish. Bake until brown, 40 minutes at 400 degrees, turning occasionally.

Sprinkle with salt.

Yesterdish suggestion: Use clarified butter. The smoke point of butter is 350 degrees. If you put something dipped in butter in a 400-degree oven for 40 minutes, you’ll end up with little burned bits where the milk solids were and a kitchen full of smoke. (And if you don’t, then you’re not using enough butter…)
