Zwieback is a German name that translates to “twice-baked.” It’s essentially slices of an egg bread that are then toasted further until dry. Typically, it’s given to children for teething or to people recovering from a stomach bug; the more American solution with be Graham crackers.

Cheese Torte
[Ingredients:
1 package zwieback
1 cup sugar
2 tsp. cinnamon
1/4 c. melted butter
4 eggs
1 cup sugar
2 lbs. cottage cheese
2 Tbsp. flour
1 pint cream]
Grate contents of one package of zwieback. Add one cup of sugar, two teaspoons of cinnamon and 1/4 cup melted butter. This forms crust.
Line a buttered springform, leaving 1 cup for top.
Filling
Beat 4 eggs, 1 cup of sugar, 2 lbs. cottage cheese, 2 tablespoons flour, 1 pint sweet cream. Mix and fill crust.
Sprinkle top with the balance of zwieback and bake in slow oven one hour.
