Zucchini Soup

Make ahead and freeze.

From a box sold in River Forest, Illinois.

Zucchini Soup

1/2 lb. diced bacon; drain well
5 lbs. zucchini
1 onion
2 cups water
1 bouillon cube

Simmer 45 minutes. Put in blender. Freeze.

Add corn, green peppers; add cheese if desired.
