Patties – Mint

Melt fondant over pan of water. When rather soft, add the flavoring–either wintergreen, oil of cinnamon, or oil of cloves. Add tiny speck of vegetable coloring for as you know patties are delicately made. Do as little stirring as possible.

When soft, pour on wax paper. Let it cool and then put in box or on a candy dish. If the mixture becomes too hard you may add 1 teaspoon of water and cook over the fire. The first patties are usually the best because they aren’t stirred or recooked.

Note: in making mint patties, remember to try to get as many patties as possible before recooking.
