Pineapple Cake

With cream cheese frosting.

From the box of L.R. from Winston-Salem, North Carolina.

Pineapple Cake

2 cups all purpose flour
2 cups sugar
2 tsp. baking soda
2 eggs
1 cup chopped nuts
1 large can crushed pineapple and juice
1 cup coconut

Mix, bake 45 minutes in greased 9×13 pan at 350 deg. Cool and ice.

Cream Cheese Icing

1/4 lb. butter or margarine
6 oz. cream cheese
1-1/2 cups powdered sugar
2 tsp. vanilla

Mix smooth, spread on cool cake. For a less rich cake use 1/2 this recipe.
