Opal’s Carrot and Peanut Salad

Four ingredients, if we’re counting salt.

Opal’s Carrot and Peanut Salad

1 cup peanuts
2 cups diced carrots
salt
mayonnaise

  1. Wash and scrape young carrots and put through food chopper.
  2. Shell peanuts and put through food chopper.
  3. Mix with salad dressing and salt and serve.

  1. I first read this as “OPRAH’s Carrot and Peanut Salad.” So I was a little disappointed. But then, not. Because, what a weird recipe.

    • That’d really be, “Oprah’s Carrot and Peanut SALAAAAAAD!”

      “Step 1: Check under your chairs–there’s a jar of mayonnaise there! And YOU get a jar! And YOU get a jar!”
