Lemon Pie Filling

For a meringue pie.

Lemon Pie Filling

2 Tbsp. cornstarch
3/4 c. sugar
1 c. boiling water
4 Tbsp. lemon juice
1 Tbsp. butter
2 egg yolks
speck salt
grated rind of 1/2 lemon

5 Tbsp. flour
1 c. sugar
1 lemon
3 eggs

Mix cornstarch and sugar in a saucepan and stir in the hot water. Cook stirring constantly until it thickens and boil 5 minutes. Add butter, salt, and grated rind, and lemon juice and egg yolk slightly beaten together. Cover with meringue and bake.
