Cornish Hens in Orange Sauce

This calls for standard size Cornish hens. The other Cornish hen recipe in this box, Cornish Hens With Parsley Sauce, appears to call for Rock Cornish hens, just based on the portion sizes.

Cornish Hens — Orange Sauce

6 Cornish hens, cleaned and split
Butter, melted
1 cup orange marmalade
1/4 cup brown sugar
3 Tbsp. wine vinegar
2 tsp. Worcestershire sauce
1/2 tsp. curry powder
1/2 tsp. ground ginger
1 Tbsp. Accent
Dash of cayenne
Salt & Pepper

Wash and dry hens. Brush with melted butter or fat. Set oven to 350 degrees. Line pan with aluminum foil. Place halves, skin side down on lined broiler pan. Combine remaining ingredients for sauce. Heat in a saucepan over medium heat to boiling point. Simmer for 2 minutes, stirring constantly. Brush surface of the hens with sauce. Roast for one half hour; turn, roast one half hour on the other side, brushing often with sauce. Yield 6 to 8 servings.
