4 cups sliced apple, not peeled
Sugar (June apples, being sour, will take 1 cup, sweeter apples about 1/2 cup)
2 Tablespoons bacon drippings
1/2 teaspoon cinnamon, optional but good
1/2 teaspoon salt
Heat bacon drippings in skillet and add the apples. Add sugar, cinnamon and salt. Cover and cook 5 minutes, until sugar liquefies. Remove lid and fry, stirring occasionally, until tender and the liquid is cooked away. Four to 6 servings.
