Zucchini Relish
10 cups grated zucchini
4 cups diced onion
3 Tablespoons salt
Let sit overnight.
2-1/2 cups vinegar
4-1/2 cups sugar
1 Tbsp. turmeric
2 red peppers
2 green peppers
1 teaspoon salt, pepper and nutmeg
Cook till clear and seal. About 20 minutes.
